Happy 2018!
To ring in the brand new year, I'm taking a moment to reflect back on 2017! I focused a lot on building up my blog last year, doing a whole lot of cooking and writing, just so I could share a whole lot of recipes with you. I am proud of what A Day In the Kitchen has become and excited for the year ahead and building it up even more!
I am happy to present to you the Best From 2017, the 10 most viewed recipes on A Day In the Kitchen last year! (Click on the name or photo to be taken directly to the corresponding recipe!)
10. Dry Brined Roast Chicken
The Best of 2017 list starts with this personal favorite, and it has proven to be a favorite amongst readers as well! Dry brined roast chicken has flavorful meat and crispy skin...not to mention it's a heck of a lot easier than wet brining and more space efficient. This method also works great with turkey!
9. Korean Sweet Potato Noodles (Japchae)
Who doesn't love a good noodle dish? And better yet, what if it's a gluten-free noodle dish?? Korean Sweet Potato Noodles, aka Japchae, is flavorful and satisfying with its mix of beef, vegetables, eggs, and yummy noodles.
8. Curry Chicken Canapes
Curry Chicken Canapes are so easy to make, a 10 year old can do it! The ingredients are nothing fancy, but the finished product looks fancy and tastes so much more exciting than what the individual ingredients are!
7. Crustless Roasted Vegetable Quiche
Everyone loves a good quiche, and most people like the filling more than the crust. So why bother with the crust when you can have a quiche that's all filling?! Gluten-free and full of flavor, this Crustless Roasted Vegetable Quiche is a perfect one-dish meal.
6. Soft Gluten-Free Sandwich Bread
Gluten-free bread does not have to be dry and taste like cardboard! Just like the name says, this gluten-free bread is soft and has that nice squidgy-like texture...just like "real" bread! It's perfect for sandwiches or toasted with a pat of butter.
5. Rich and Creamy Butter Chicken
This is one of my proudest recipe accomplishments and I am thrilled that it qualified for the Best of 2017 list! Because of this recipe, we now enjoy Rich and Creamy Butter Chicken at home whenever we want, and so can you!
4. Crispy Crunchy Cornflakes Chicken
This dish is insanely easy to make and oh-so-good to eat! Crispy Crunchy Cornflakes Chicken takes only 2 ingredients to make (besides the chicken, of course) and is a great recipe to have up your sleeve when you need to think up a quick and satisfying meal!
3. Cold Spicy Cucumber Bites
Eating fresh vegetables doesn't always have to come in the form of a salad! These Cold Spicy Cucumber Bites have an Asian twist and offer a different take on a vegetable side-dish!
2. Sweet Potato Fries with Chipotle Mayo
Sweet potatoes fries never cook up as crisp as regular potato fries, but this recipe gets them pretty close! Crisp wedge-cut sweet potatoes fries and creamy chipotle mayo makes for a magical combination!
And the Number 1 recipe from the Best of 2017 list???
1.How to Cook Eggs In Rice Cooker!
Considering the fact that I questioned whether or not to even post this recipe to begin with, the fact that it came in at Number 1 was a big surprise! How to Cook Eggs In A Rice Cooker surpassed Number 2 on the Best of 2017 list by a huge margin! I didn't know that this recipe would become such a hit, but I'm so glad that it has! If you haven't caught on to this yet, perhaps you should check it out!
I hope you enjoyed looking back on the Best of 2017! Here's to looking forward to the Best of 2018 and everything yet to come!
