    Sweet and Nutty Chocolate Coated Dates

    In the mood for something sweet? Incredibly easy to make using only 3 ingredients, these chocolate coated dates are the perfect sweet treat!

    I like dates. I like chocolate. I like almonds.

    Not necessarily in that order, of course, but I do like them all.

    And what if I told you that you can make a sweet treat with just those 3 ingredients in less than 10 minutes?

    I’m not sure why it took me so long to figure this recipe out.

    Do you know the candy Almond Roca? It’s chopped almonds embedded in chocolate that surrounds a chunk of hard toffee candy. I remember eating it when I was a kid and loving it, all the while I’m sure it wreaked havoc on my teeth.

    When I started putting these chocolate covered dates together, they reminded me a lot of Almond Roca…they looked just about the same! The only difference is there’s a healthy date inside instead of a hard chunk of sugary candy! They also don’t hurt your teeth when you bite into them!

    I love how easy this recipe is, and how you can turn something as simple as dates, chocolate, and almonds into something that looks so fancy. They are perfectly sized for when you just want a small sweet treat, and they’re not all that bad for you either…or your teeth. πŸ™‚

    Sweet and Nutty Chocolate Covered Dates

    Ingredients

    • 8 pitted Medjool dates
    • ΒΌ cup dark chocolate chips
    • ΒΌ cup almonds

    Instructions

    • If necessary, remove pits by slicing into the dates on one side with a paring knife and gently prying the date open. Press date closed after removing pit.
    • Chop almonds into fine pieces. Place in a bowl and set aside.
    • Place chocolate chips into a microwave-safe dish and microwave for 1 minute. Stir chocolate chips and microwave again at 20 second intervals until chips are completely melted.
    • Coat the date in the melted chocolate, making sure all sides are covered.
    • Place the chocolate coated date into the bowl of chopped almonds and coat well, gently pressing the nuts into the chocolate.
    • Place nutty chocolate coated dates on a plate and refrigerate for an hour before serving.
    • Store leftover dates in the fridge.

    Notes

    • Use whatever chopped nuts you prefer: walnuts, cashews, pecans, etc.
    • I use dark chocolate, but this will also work with other chocolates.
    • Sprinkle some sea salt on the chocolate coated date for the sweet/salty combination!

      Wow - this instantly reminded me of a healthy Ferrero Rocher! And only 3 ingredients - I'm in! Dates are way underrated. Love those guys..

        I'll admit I didn't discover how wonderful Medjool dates are until a friend got me on them a year ago. Now I love them!
