Easy Weeknight Taco Salad

We all love tacos, don’t we?

I especially like the crunchy ones…crisp warm shells, tasty seasoned ground beef, cheddar cheese, lettuce, tomatoes, salsa, guacamole…YUM, am I right??

The thing is that to get to YUM, there’s the whole fiddly bit with carefully trying to cram our favorite fillings into the shell…all without breaking it!

THEN there’s biting into the taco only to have half of what you’ve bitten fall onto the plate…if you even have a plate!

From there, we end up with messy fingers. And don’t even talk about trying to set the tacos down without the fillings starting to pour out.

Yup. It’s a pickle of a situation. What’s the solution?

Why, taco salad, of course!

If you’re going to end up eating what’s fallen onto your plate with a fork anyway, why not just start with the plate and fork from the get-go and make life simpler?

I have to admit that I originally got this idea from my husband when we were dating yeeeaaarrss ago. He was a starving grad student back then, living on his own, and taco salad was one of his go-to meals.

That being said, his taco salad was the simplified “starving-student” version. 😉

I have since bumped the dish up a notch, especially with my Super Simple Basic Guacamole to top it off!

And don’t get me wrong…I still love eating tacos the traditional way. But being able to eat it in a civilized manner with a fork from a plate once in a while ain’t all that bad! Sometimes I don’t want to fiddle and I just want to eat!

No small shells to cram all the fillings. No messy hands. Just all the taco goodness you want without the mess or fuss!

Oh, and I called this Easy Weeknight Taco Salad because it’s so quick to whip up on a school night.

But seriously…who is going to turn down taco salad on ANY night of the week? Not me!!

Easy Weeknight Taco Salad

No need to fiddle with stuffing taco shells and having all the filling falling out while you eat! Enjoy your taco salad eating with a fork from a plate!

Ingredients

  • Cooked seasoned ground beef
  • Chopped lettuce
  • Tortilla chips
  • Cut tomatoes
  • Salsa
  • Guacamole
  • Cheddar or Monterey Jack cheese

Other topping ideas:

  • Pinto or black beans
  • Chopped cilantro
  • Sour cream

Instructions

  • Make the first layer of your salad base either tortilla chips or lettuce.
  • Pile on the toppings and enjoy!
