    Roasted Veggie Sausage Salad

    I don't know about you, but I love leftovers. I know some people shun leftovers like the plague, but I grew up with leftovers and find they can be a blessing in disguise. Aside from saving me from those days when I don't have the energy to cook, they are great for combining with other ingredients to create something new and tasty!

    As you all know, one of my favorite things is a good salad...no boring salads allowed in this house! In this recipe, I take leftovers and fresh ingredients and WALAA -- I've got another awesome salad meal.

    This Roasted Veggie Sausage Salad is crazy good. This salad calls upon my recipe for Roasted Veggies and Sausages, which is oh-so-simple to make. Warm up the leftovers before spread over a bed of fresh spinach. Top with some feta and a sprinkle of fresh-ground salt and pepper and you've got awesome in every forkful.

    You don't have to warm up the leftover veggies and sausages if you prefer...it would still satisfy the non-boring and very-tasty salad requirements! However, I find warm savory toppings for a salad makes it that much more satisfying. It just feels as if you're getting more of a meal if it's got some heat in it.

    Another great thing about this recipe is you don't have to be very precise with measurements. You can simply throw things together without much thinking and you've got meal magic, just like that! You will be impressed at how quickly you can throw something like this together in a few minutes, and amazed and how good it tastes. And again, you can vary some of the toppings. Don't like feta? Try a different cheese or skip it altogether. Like some crunch? Add a sprinkle of chopped walnuts or sliced almonds. Want to add even more protein? Add chopped hard-boiled egg, or fry an egg and lay it right on top. Want a bit of zest? Drizzle some balsamic vinegar over the salad. Trust me...you can't go wrong and it will all taste fabulous.

    Don't you want to make a pan-full of Roasted Veggies and Sausages JUST so you can throw together this salad the next day?? I'm getting excited about the leftovers just thinking about it!

    Ingredients

    • Handful or two of fresh spinach
    • Roasted Veggies and Sausages leftovers
    • crumbled feta cheese (optional)

    Instructions

    • Spinach on your plate.
    • Top with leftover Roasted Veggies and Sausages. Heating the leftovers or not is up to you.
    • Sprinkle with crumbled feta.
    • EAT!

    Notes

    Customize it for you!

    As mentioned above, there are so many ways you can play with this salad!
    Use a different cheese if you want something different than feta.
    Top with chopped walnuts, sliced almonds, or chopped pistachios.
    Drizzle some balsamic vinegar over the salad for a zesty bite.
    Top with chopped hard-boiled egg, or fry and egg and lay that right on top of the salad.
    Use different greens if you want something other than spinach.
