Sweet and Nutty Chocolate Covered Dates
The perfectly sized nibble to satisfy that sweet craving!

pitted Medjool dates
dark chocolate chips
If necessary, remove pits by slicing into the dates on one side with a paring knife and gently prying the date open. Press date closed after removing pit.
Chop almonds into fine pieces. Place in a bowl and set aside.
Place chocolate chips into a microwave-safe dish and microwave for 1 minute. Stir chocolate chips and microwave again at 20 second intervals until chips are completely melted.
Coat the date in the melted chocolate, making sure all sides are covered.
Place the chocolate coated date into the bowl of chopped almonds and coat well, gently pressing the nuts into the chocolate.
Place nutty chocolate coated dates on a plate and refrigerate for an hour before serving.
Store leftover dates in the fridge.
Use whatever chopped nuts you prefer: walnuts, cashews, pecans, etc.
I use dark chocolate, but this will also work with other chocolates.
Sprinkle some sea salt on the chocolate coated date for the sweet/salty combination!
