Roasted broccoli and bacon is going to become one of your favorite dishes to make! Roasted broccoli is always delicious, but add bacon and you've got an extra layer of flavor and deliciousness! Perfect as a side, but hearty enough to be a low-carb meal, and easy to whip up any night of the week.
Cut broccoli into bite-sized pieces and wash and rinse. Spin in a salad spinner to remove as much moisture as possible.
Peel and cut onion into large chunks, leaving chunks intact without separating into layers.
Cut bacon into small chunks.
Transfer spun broccoli and onion chunks to prepared baking sheet and mix with 2-3 tablespoons extra light olive oil (or any neutral flavored oil).
Scatter bacon pieces over the broccoli and onions.
Season with some salt and pepper.
Roast for 20 minutes, then stir with a spatula, breaking up the onion chunks and doing your best to turn the pieces over for even roasting.
Roast for another 10-15 minutes.
Serve immediately. Serve with lemon wedges, dried chili flakes, or fresh grated Parmesan cheese, if desired.
Notes
Adjust the roasting time depending on how tender or crisp you prefer your broccoli and onions to be. At a minimum, however, you should roast for at least 15 minutes to ensure the bacon is cooked through.
Since ovens can vary, keep an eye on the broccoli buds as they can overcook quickly and become crisp.
Cauliflower makes a great substitute for the broccoli.
Serve with lemon wedges or sprinkled with dried chili flakes or fresh grated Parmesan.
Top with a Bolognese sauce for a tasty meal or serve it with polenta or fried eggs.
