Japanese Gyudon Beef Bowls

Ingredients

lb.
thinly sliced beef
½
medium onion
Braising liquid:
2
cups
water
1
tablespoons
dashi broth granules
⅓
cup
tamari
(soy sauce if you are not gluten-free)
¼
cup
mirin
1
tablespoon
honey
Instructions
In a medium to large sized pot over medium heat, add all braising liquid ingredients.
Chop onion into chunks. Set aside.
Cut hot pot beef slices in half.
Add beef slices to the pot, stirring occasionally to loosen the pieces so they do not stick together.
Bring to a boil.
Reduce heat to simmer and cover the pot with a lid, leaving a narrow gap for steam to escape. Simmer for 45 minutes.
Remove pot lid and add onions. Cook another 5-10 minutes.
Using tongs or a straining spoon, serve beef and onions over hot rice. Spoon some of the sauce over the beef.
Garnish with pickled ginger and Sichimi Togarashi (Japanese chili pepper seasoning), if desired.
Notes
700 calorie count includes serving the beef over 1 cup of cooked white rice
Look for "hot pot beef" or any very thinly sliced beef like eye of round. These can be found quite easily in Asian supermarkets.
