Didn't finish an entire loaf of fresh bread? No worries! Take one-or two-day old bread and turn it from stale into fantastic with these Broiled Cheese Toasts!
Lay thinly sliced day-old bread on a parchment lined baking sheet. (Place the bread slices on a rack if you have one, but it is not necessary.) Broil for 2 minutes to toast.
Flip bread slices and broil another 2 minutes.
Remove pan from the oven and butter each slice of toast.
Top each slice with a mixture of grated cheddar and Parmesan, doing your best to cover the edges. Top with fresh ground black pepper.
Place in the oven and broil for 2-3 minutes, keeping an eye on the toasts to make sure they do not burn. Remove when cheese is melted and bubbly.
Top each with a slice of avocado and freshly ground salt. Enjoy immediately!

Top cheese toasts with apple slices, sliced almonds, or a sprinkle of feta crumbles for even more cheesiness! Try different grated cheese to switch up the flavor. Turn them into pizza toasts by topping them with a bit of tomato sauce, salami, and mozzarella. Add a slice of smoked salmon and some capers and dill for a more sophisticated toast!
