Roasted Sweet Potato Halves

Enjoy these sweet potato halves in HALF the cooking time! Simple, quick, and easy, these sweet caramelized sweet potatoes are full of nutrients and delicious any way you serve them!

This recipe was inspired by my own journey to eating healthier and looking to cook foods that are satiating, filling, and, of course, tasty! Roasted sweet potatoes have become one of my favorites to make I love how versatile they are for different dishes and meals.

Ingredients

Five raw sweet potatoes coated with dirt.
  • Sweet potatoes
  • Oil
  • Salt
  • Pepper

Instructions

Preheat oven 400F/200C.

Five cleaned red skinned sweet potatoes on a wooden surface.

Rinse and scrub any dirt off the sweet potatoes under water. Use a vegetable brush, if necessary. Pat dry.

Trim off any tips from the ends of the sweet potatoes if they look moldy or rotten.

Cut each sweet potato in half lengthwise.

Place the sweet potatoes, cut-side up, on a parchment-lined baking sheet. Brush all the sweet potatoes with oil.

Note: I brush oil on the sweet potatoes to control how much I use. Use an oil spray or to toss the sweet potatoes in oil in a bowl, if you prefer.

Season the sweet potatoes with salt and pepper.

Flip all the sweet potato halves over so the cut sides are face down. Brush them with more oil and season with salt and pepper.

Cooking Tip: For salting the sweet potatoes, I err on the side of being conservative, grabbing just a pinch of salt in my fingertips and sprinkling it over the sweet potatoes from a height. You can always season with more salt at serving, but you cannot take away the saltiness if you've added too much.

Roast the sweet potato halves cut-side down for 30 minutes. Test for doneness by inserting the tip of a knife into the sweet potatoes. If it goes in easily, they are done. If your sweet potatoes are bigger, roast for another 10 minutes and test again.

Servings Suggestions

Roasted sweet potato halves make the perfect side dish to any meat or fish entrée. Serve them with dishes like a Sunday roast, broiled salmon, Dry Brined Roast Chicken, or Pulled Pork, just to name a few.

But have you ever considered that they would be delicious in a taco bowl? This is one of my favorite ways to eat them, surrounded by fresh spinach, and topped with tasty taco seasoned ground beef, some grated cheddar cheese and fresh pico de gallo salsa. It's loaded with texture and the sweetness from the sweet potatoes adds another layer of deliciousness!

Another way I love to eat the sweet potatoes is with some scrambled eggs and spinach for breakfast (or lunch!). Add some Greek yogurt dollops to the plate and it makes for a super satisfying and very healthy meal.

Commonly Asked Questions

Does this recipe work with any variety of sweet potato?

Yes! The orange flesh sweet potato is the probably the most iconic, but there are sweet potatoes with white flesh or purple flesh, and all with different coloured skins. They will all work!

Can you eat the skin?

Yes! Just be sure rinse and scrub any dirt off the sweet potatoes under water. Use a vegetable brush, if necessary. The skin is a great source of additional fibre!

Can I use other seasonings on the sweet potatoes?

Yes! Salt and pepper are the basics, but try onion powder, garlic powder, paprika, chili powder, etc. Grated parmesan cheese is also a delicious idea!

How do you reheat leftovers?

Warm leftover sweet potato halves in the microwave or in the oven.
