Roasted Cabbage Steaks

Roasted cabbage steaks make a perfect vegetable side dish, but they're also delicious enough to be a meal! Preparation is also a breeze! Serve them roasted simply with salt and pepper and other dried seasonings, or top them with a rich bolognese sauce, stew, or your favorite stuffed potato toppings like butter, sour cream, bacon, and chives! Take this ordinary vegetable and make it extraordinary!

Ingredients

  • Head of cabbage
  • Oil (or butter)
  • Salt
  • Pepper
  • Other dry seasonings like onion powder, garlic powder, paprika, etc. (optional)

Instructions

Preheat oven 400F/200C. Cut the head of cabbage in half (I cut with the cabbage with the core facing up so I can see where halfway is.).

Cut each half of the cabbage into 2-3 steaks, about 1-inch in thickness (depending on how big the cabbage is). Do not worry if the end piece is smaller than 1-inch. Transfer the steaks to a baking sheet (line with parchment paper or foil for easier clean-up).

Brush the top of the steaks with oil or butter.

Season the cabbage steaks with salt and pepper. Add other dry seasonings like onion powder, garlic, powder, cumin, etc., or fresh grated Parmesan cheese, if desired. Bake for 30 minutes. Serve immediately.

Helpful Tip: You don't have to make the first cut in the cabbage head in the middle like I did. You can simply start slicing from one side to the other.

Serving Suggestions

Surprisingly, the cabbage steaks are very good just roasted with oil, salt and pepper, making a perfect side dish to balance stronger flavored main dishes. Add other dry seasonings for extra flavor, like paprika, onion powder, garlic powder, cumin, chili powder, etc.

Serve them this way to go with main dishes like Dry Brined Roast Chicken, Smoky Chipotle Beef Barbacoa, Crispy Crunchy Cornflakes Chicken, or Slow Roasted Dry Rub Ribs. The cabbage steaks are also delicious as a main dish, especially when served with extra flavorful toppings! Top steaks with spoonfuls of chili, homemade bolognese sauce, hearty beef tomato stew, or pulled pork.

Drizzle them with Sweet and Tangy Balsamic Vinaigrette, Creamy Greek Yogurt Caesar Dressing, Orange Honey Mustard Dressing, or Creamy Greek Yogurt Cucumber Tzatziki. Bake them with freshly grated Parmesan cheese and get a nicely browned cheesy steak! Try them topped with your favorite baked potato garnishes like sour cream or a creamy yogurt mint sauce, cheese, and bacon! There are many ways to dress them up!

Commonly Asked Questions

Do I leave the cabbage core in?

Yes, you can! It will not be as tender as the leaves, obviously, but it is still good to eat. If you don't want the core, cut it out either after you cut the cabbage in half or from each steak.

Can I use purple cabbage?

Yes! The taste will be slightly different than using green cabbage, but it's still good!

How do I reheat leftover steaks?

Warm them in the microwave for a minute or in the oven for a few minutes.

Can I use the whole cabbage?

YES! Even if the end pieces are narrower than ½-inch, I roast them on the same pan. They will brown more than the big steaks, but are just as pretty and delicious!
