If you've ever made or bought a fresh loaf of bread, you know that it tastes best the first day. The second day, however, the loaf begins to get a bit sad. You can eat it, but it doesn't make your taste buds happy like it had the day before. You simply tolerate it.
Don't even talk about the third day.
Then you feel guilty throwing the rest of the loaf away and feel like you've wasted money. Well, I'm here to tell you to not throw that bread away just yet...broiled cheese toasts are the magic solution for day-old bread!
Okay, it's not exactly magic, but you get the idea...
Broiled cheese toasts will give that day-old loaf of bread a new tasty life!
I used day-old gluten-free multi-grain bread, but this will happily work for any crusty bread. You could you pre-sliced packaged bread, but the crusty artisan type breads offer more substance and texture. I find the crusts on artisan-type breads have a nicer satisfying crunch to the edges once toasted. If you still want to use the pre-sliced sandwich breads, just cut the slices into halves or quarters to make them snack size.

Crispy toast edges, melted cheese, and a slice of nutty avocado makes for a happy mouthful. And did I mention they're quick and easy to make?
I have made them as an after school snack alongside some fruit for the boys. The toasts are healthy, substantial enough to hold the boys until dinner, and most importantly, they are YUMMY.

Broiled Cheese Toasts
Ingredients
- 8 slices thin sliced day-old bread
- Butter
- 1 cup Grated cheddar cheese
- ½ cup grated parmesan cheese
- fresh ground black pepper
- ½ avocado thinly sliced
- Fresh ground salt
Instructions
- Preheat broiler.
- Lay thinly sliced day-old bread on a parchment lined baking sheet. (Place the bread slices on a rack if you have one, but it is not necessary.) Broil for 2 minutes to toast.
- Flip bread slices and broil another 2 minutes.
- Remove pan from the oven and butter each slice of toast.
- Top each slice with a mixture of grated cheddar and Parmesan, doing your best to cover the edges. Top with fresh ground black pepper.
- Place in the oven and broil for 2-3 minutes, keeping an eye on the toasts to make sure they do not burn. Remove when cheese is melted and bubbly.
- Top each with a slice of avocado and freshly ground salt. Enjoy immediately!

Customize it for you!
Top cheese toasts with apple slices, sliced almonds, or a sprinkle of feta crumbles for even more cheesiness!Try different grated cheese to switch up the flavor.
Turn them into pizza toasts by topping them with a bit of tomato sauce, salami, and mozzarella.
Add a slice of smoked salmon and some capers and dill for a more sophisticated toast!
