Piña Colada Mocktail Smoothie

This piña colada smoothie takes only TWO ingredients to make! Toss pineapple and coconut milk into a blender, whiz away, pour into a glass and enjoy! It hits the spot on hot summer days and being non-alcoholic means everyone can enjoy it!

Ingredients

  • Pineapple (fresh-cut or canned)
  • Coconut milk

Instructions

Add the pineapple chunks and coconut milk to a blender.

Pulse or blend until fully incorporated. Serve over ice to keep it chilled for longer.

Pro Tip: If the smoothie is too thick to blend, add a bit more coconut milk or some coconut water or pineapple juice to thin it out.

Freezing the pineapple (optional):

Cut your fresh pineapple into bite-sized chunks and lay in a single layer on a parchment-lined pan.

Freeze until chunks are frozen. Store any unused frozen pineapple in a resealable freezer bag and keep in the freezer until ready to use.

Pro Tip: Cutting the fresh pineapple and freezing the chunks is a great way to make the pineapple last if you can't finish the fresh pineapple in time before it goes bad. Then it's really easy to toss the frozen fruit into the blender to make the piña colada or any smoothie!

Commonly Asked Questions

Can I used canned pineapple?

Yes! I prefer to use ones that are canned in their own juices and not ones in syrup, but use whichever you prefer or have available.

Can I use coconut water?

Yes, you can, but it will not be as thick as when using coconut milk.

What if the mixture is too thick to blend properly?

Add a bit of coconut water, pineapple juice, or more coconut milk.

What if I want to add alcohol?

Traditional piña colada uses light rum. I would suggest starting with 1 tablespoon for this recipe, adding more according to personal taste.

Ingredients

  • 1 ½ cups pineapple chunks
  • 1 cup coconut milk
  • ¼ cup pineapple juice (optional)
  • Ice cubes

Optional garnishes:

  • Fresh pineapple wedges
  • Maraschino cherries
  • Sprigs of mint

Equipment

  • Blender

Instructions

  • Add the coconut milk to the blender, then the pineapple chunks.
  • Blend until the mixture is smooth. If the mixture is too thick to blend properly, add some pineapple juice, coconut water, or more coconut milk.
  • Pour into glasses and add a few ice cubes to keep it nice and cold.
