I’m not a big coffee drinker and I don’t need coffee to start my days. However, I love coffee flavor (Hello Haagen Dazs Coffee Ice Cream…my favorite!). I am more of a social coffee drinker…(unless I’m driving for 6-8 hours in a single day on a summer road trip from California to Canada and back in which case I need to make sure I’m AWAKE…but that’s another story…).
Anyway, as a member of the Social Coffee Drinker Club (is there such a thing? There should be…), I like iced coffee most. And if you like iced coffee like me, you are going to fall in love with this Cold Brew Coffee Ice Cube Latte.
Just about everyone likes coffee…some people can’t function without their morning cuppa joe! And with summer upon us and temperatures rising, coffee on ice is even more popular. This Cold Brew Coffee Ice Cube Latte is a perfect summer coffee drink that you can make right in your own home for way less than what the coffee shops charge.
I was inspired to create this recipe while I was at a restaurant here in Hong Kong recently. While flipping through the menu, I saw a fabulous photo of milk being poured over what looked like coffee ice cubes. I thought, “That looks amazing!” And not only did it look amazing, I thought what a great recipe idea that would be!
I would need an old-fashioned ice cube tray. But of course, I don’t own one. Our freezer has an ice cube maker, but I can’t exactly go and pour coffee into the water feed! Luckily, ice cube trays are easy to find and cheap!
As the name suggests, this drink uses cold brew coffee. I am a BIG fan of cold brew, and in fact, I use my Cold-Brewed Coffee recipe as a component in this recipe. Cold brew coffee may take a while to make, but the lack of bitterness makes it so worth your patience.
Once you’ve got your coffee, it’s time to make the cubes! I use up the all the coffee for cubes and store the cubes in a ziptop bag in the freezer so they’re ready to use. And then all you need is milk! If you are avoiding dairy, feel free to use other non-dairy options like soy or almond milk.
How simple (and beautiful) is that?
So what makes this Cold Brew Coffee Ice Cube Latte so great? Let me tell you…
a) Smooth coffee with no bitterness.
b) The ice cubes are full of coffee so your drink does not water down and the flavor doesn’t weaken. The coffee flavor actually strengthens and become richer as your drink sits!
c) Your iced coffee will taste like coffee down to the last drop AND it will also stay cold!
d) It looks fabulous (and we all know that half our appetite is visual!).
e) It only has two ingredients.
How can you argue with any of those reasons?
Furthermore, here is one more reason that makes this drink so great. You can turn it into a frappe! You know those expensive ice blended coffee drinks you can buy at coffeehouses? Make it yourself at home! Put the coffee cubes in a blender with some milk and whiz whiz whiz!
I can’t tell you how excited I am about this recipe. I had a schedule all made up of what recipes I would be posting throughout the summer, and this Cold Brew Coffee Ice Cube Latte has just messed that whole schedule up! However, there is no way this recipe can sit at the end of the queue to be published in a few months! Nevertheless, it’s all a good thing, and all the more timely with the hot weather!
As pure coincidence, while I am writing up this post to publish, I see that Starbucks is now selling coffee ice cubes! For an additional 80 cents (USD) per cup, you can add coffee ice cubes to your (already expensive) coffee drink. This is obviously a trend that is going to be a huge hit with coffee drinkers during the summer. With my recipe, you can hop on this trend right in your own kitchen for cheaper!
